The role of MGO and its ability to coordinate iron

The magic molecule in Manuka honey "MGO" has some special properties that makes Manuka honey unique. One of its special properties is that it is highly reactive, allowing it to react with amino acids in proteins. It is known to react with lysine, arginine and cysteine amino acids.

These reactions change the function of the proteins and enzymes and that changes the biological properties inside the cells in your body.

MGO has been shown to stop enzymes from working, which is believed to be one way it performs its antibacterial activity.
